Meal Prep Sundays

Happy Monday! So to start out this post I first want to say that I am in no way a good cook... with that being said I really like to cook. So I am 16 and do my own grocery shopping and I do my own meal prep. I am fairly picky about what I want to eat so my mom just gave me control, so now every Sunday I go grocery shopping then come home and cook. SOO regarding to my last post I talked about getting some new hobbies and I decided that I was going to strengthen my cooking hobby. In that post I said I was going to document that and publish for everone to see. SOO I would like to introduce my first video about cooking and the start of my new series of hobbies!

So I am going to dive into this video and go step by step of what I do for meal prep and how this particular recipe goes!

So usually I start on Sunday morning after I have gotten ready. I sit down and go on pinterest and seach for any healthy and easy recipes. (Yes I was watching The Office.) So this week I had quite a few left over meals from last week so I just did one meal. Usually I do 2-3 differnet meals which makes about 8-12 servings (which is why I had so many leftovers.)

This week I made BBQ chicken with broccoli, sweet potato, and onion mixture.

Ok so moving on. I found the recipe for the week, looked at what I needed and what I already had and made my grocery list along with some other snacks and breakfast foods. After I made my list I hit the store and did my shopping!

I got home and put away all my groceries and got ready to make my food.

Lets start this recipe.

Servings 4

Calories around 230 servings per serving

You will need:

2 Sweet Potatoes

1 head of broccoli

1 yellow onion

3 chicken breasts

BBQ sauce of choice

Salt

Pepper

(Any other seasonings for veggies)

Olive oil

OK so lets get a move on it.

So the first thing I did which I didn't show in the video was pre heat my oven to 400. So do that first... sorry I fogot to film it.

Next I peeled my 2 sweet potatoes and washed them up good. I decided to cut mine up in little squares but you could cut them anyway you would like. I tossed the 2 diced up sweet potatoes into a medium sized mixing bowl.

Next I cut up my whole yellow onion into a similar shape to the sweet potatoes, just so that they would all be proportional.

After cut them up I threw them into the bowl with the sweet potatoes.

For seasoning I grabbed some Olive Oil, Salt, Pepper, and Crushed Red Pepper. I didn't measure out what I put into my mixture, I just put in what I thought was a good amount.

I mixed all that up and put it onto a cookie sheet that was sprayed with pam. I put the veggies in the oven for 15 minutes.

While that was cooking I moved onto the head of broccoli. I just cut the broccoli up and put it into the same bowl as the sweet potaotes and onions were in and used the same spices and oil as I did for the sweet potatoes.

Next I got out the 3 chicken breasts. All I do for them is rub the BBQ sauce all over them and stick the chicken on a cookie sheet and baked them for 20 minutes (or until middle wasn't pink) at 400.

So my timer for my sweet potatoes is up and now it's time to cook the broccoli. I took the sweet potatoes out of the oven. I moved all the sweet potatoes and onions to one side of the pan then poured the borccoli onto the pan next to the sweet potatoes. I stuck them back into the oven for another 15 minutes.

The next part you can ignore if it doesn't appeal to you. I just randomly decided to make some sweet potato fries! So all I did was cut up a peeled and washed sweet potato into little strips. I mixed them with some olive oil and salt/pepper. I put them in the oven for about 25 minutes or until good and crispy.

SOOO back to my BBQ chicken. When my chicken, broccoli, sweet potatoes, and onions were all done I left them out to cool. I shredded my chicken with 2 forks and mixed in some more BBQ sauce with the shredded chicken.

Lastly I just plated the Veggies and Chicken into dishes. I bagged up some grapes, celery, and my fries so everything is easy to grab in the mornings1
